Kale Chips!

Hey all you lovely people! Hope everyone had a great week-end! I’m sure glad it’s over, I’m pretty sure I’m the only one saying that right now but it’s now MY week-end! I’m really needing it! Works been a little nutty lately. Anyways Saturday night where I left off, I went to my momma’s for dinner with the fam. We do a family dinner every saturday, it’s really the only time we see each other during the week so it’s nice to all get together and eat some food! Sadly I forgot my stupid camera that was charging and couldn’t even take pictures (i’m a bad blogger!). My Mom made Salmon, rice, garlic bread, and corn, it was delish.

Before I went to my Mom’s I went for a 5k run, since I’m doing two 5k’s in the next 3 weeks I’m trying to work on my speed, I’ve never really been very fast so that’s one thing I’m really trying to work on, anyway i ran the 3.1 miles in 28:17 not bad.

After my green monster in a bowl yesterday I wasn’t hungry at all until dinner! It held me over forever!! I did have a few bites of this corn bread I couldn’t resist!

This morning I got to sleep in an hour later woo hoo! Sometimes one extra hour really helps! I woke up feeling parched so I drank some lemon water.

I also had Kashi H2H cereal with almond milk and an organic honey crisp apple with maranatha PB.

I need to switch up my breakfast more! I feel like I had this everyday this week!! It’s just so damn good..

After work I was starving to death and craving veggies hardcore. So I made a gigantic salad and I ate it like it was my last meal ever.

-Spinach

-Avocado

-Broccoli

-Cauliflower

-chickpeas

-Tbs Newman’s Own Light Honey Mustard Dressing

The only thing this salad was missing was my beloved carrots. My stupid fridge decided to freeze them, nothing else was frozen, just the carrots. :(

I snacked on some Trader Joe’s trail mix. I love the dried pineapple in this and i find myself digging for it so I get more in my handful..

Next up was dinner. I had some of the leftover chili with sweet potatos on the side.

I also tried something that I’ve never tried before…kale chips! I keep hearing about how good they are so I decided tonight was THE night. I drizzled them with a tbs of EVOO and sprinkled some salt put them in the oven on 375 for 15 min and I burned them! It was sad, but I still ate them. They totally do taste like chips! They have a great crunch to them, I will be making more of these in the future!

After dinner I popped in this dvd with Valerie Bertenili for a good 45 min. strength session and here we are! My husband is watching Jurassic Park and I think I’m gonna go join him nothin’ like a good dino movie for the 90’s.
